About this coffee

It’s a family affair at the El Diviso coffee farm. Located in Colombia’s lush Normandia district, Jose Uribe Lasso and his three sons are all about pushing the boundaries of exceptional coffee through the careful cultivation of unique coffee varieties and the latest processing methods.

Spanning about 14 hectares, at an altitude of 1770m, the farm harvests just once a year. from October through to December. All the coffee is handpicked at its most ripe stage, then naturally dried under controlled conditions and homogeneous temperatures and to give durability to the coffee and preserve the quality. Surrounding the coffee plantation and mill the family keep a large area of natural reserve that approaches 5 hectares, where they take care of and preserve the natural flora and fauna to ensure diversity of the landscape.

We've been lucky enough to secure two different lots from El Diviso. The first is a Geisha variety and the second is the unique Sidra variety.

They are both amazing coffees, but the Sidra has been getting plenty of attention in recent months after it was featured by the winner of the 2022 World Barista Championships.

In terms of flavour, the juicy flavours of the unique Sidra variety, along with the careful anaerobic natural processing at the El Diviso estate deliver a stunning tropical fruit-like flavour experience that needs to be tasted to be believed.

“Tropical, tropical, tropical! An amazing tropical fruit medley. Straight away I got fruity notes of Guava, Mango, Passionfruit and Pineapple. When I cupped for people, they described it as "a tropical fruit salad with chocolate poured on it". This is an astonishing natural processed Colombian coffee.”

Brewing Tips

For best results, our baristas recommend brewing this coffee using a Pourover Filter, Aeropress, French Press or similar brew method:

Suggested Brew Recipe

  • 17 grams Coffee (medium grind)
  • 306 ml Water (~93°C)

Notes:

For this coffee, our baristas recommend using a ratio of 1 part coffee to 18 parts water, and aiming for an overall brew time of 2.30 minutes.
This brew ratio is also a great starting point if you're brewing using an Aeropress, French Press (Plunger), Batch Brewer or Chemex.

  • 20.5 grams Ground Coffee
  • 48 grams Liquid Espresso
  • 28 seconds Extraction Time
  • 93 °C Water Temperature

Notes:

Not every machine has 22g filter baskets - so try a ratio of 1 part ground coffee to 1.6 parts liquid espresso (eg for a 16g basket, extract 26g espresso)
