From the moment Sunnyboy opened its doors, the team knew coffee would be the cornerstone of their business. “Before anything else, we knew we could nail coffee,” says Nova. “We love coffee. We set up the whole venue around the coffee aspect of it.”
That decision led them straight to Seven Miles. “There was no other choice but to use Cat’s Pyjamas moving forward,” says Tom. “We’d had great feedback previously, and every time I have another coffee, I’m like, it’s not as good.”
Sunnyboy’s setup is built for speed and consistency. With two coffee machines, two grinders, and two taps, the team delivers lightning-fast service. “People constantly say, ‘Oh my God, are you sure this is mine?’ because it comes out so quickly,” Nova laughs.
The Cat’s Pyjamas blend has become a local favourite. “It’s robust, strong, cuts through milk well, and it’s also great black,” says Nova. “It’s very moreish.”

Beyond the coffee, Sunnyboy is all about good vibes and great food. “It’s pretty much a takeaway shop, but just good quality,” says Tom. “Like an elevated fish and chip shop.” The menu features barramundi, avocado toast with pickled onions, açai bowls, and fresh bacon and egg rolls. “We wanted something inclusive—something that appealed to everyone.”
The name Sunnyboy evokes nostalgia and beachside fun. “We always liked that nostalgic style,” says Nova. “It’s fun, relevant to the beach, and just felt right.”
Tom and Nova bring years of hospitality experience and a strong family dynamic to the business. “We were born into it,” Nova shares. “Our parents had bakeries and brought us into cafes before we were even born.”
Sunnyboy’s team culture is just as important as the product. “I love being on the shop floor with my staff,” says Nova. “They’re very supportive, and when a customer pulls you aside to say how lovely your staff are, it’s a really lovely feeling.”
Sunnyboy is more than a beachside café—it’s a fast-paced, community-focused venue built on quality, speed, and heart. “It’s all about the customers and the staff around you,” says Nova. “You want to come to work and have a good day.”
