
More About The Coffee
Kenyan Inoi Thaita AA is sourced from the Thaita Factory in Kirinyaga County, located on the slopes of Mount Kenya. The region takes its name from the mountain itself, meaning “crest of whiteness,” a reference to its snow‑capped peak that towers above the surrounding coffee‑growing landscape. Around 800 smallholder farmers contribute cherries to the factory and are members of the Inoi Cooperative Society, growing coffee on small plots of land with a strong focus on quality at every stage of production.
Situated at approximately 1,750 metres above sea level, Kirinyaga is known for its bright red, nutrient‑rich soils and ideal growing conditions. The high altitude, combined with consistent rainfall and cool temperatures, allows coffee cherries to mature slowly, developing complexity and vibrant acidity. The region experiences two harvest periods each year, with the main harvest running from October to December and a secondary fly crop from April to July.
Cherries are hand‑picked only at peak ripeness and delivered to the mill, where they are carefully sorted to remove underripe fruit and foreign material before processing. This lot is fully washed, enhancing clarity and structure in the cup, and features classic Kenyan varieties including SL‑28, SL‑34, and Ruiru 11. The result is a beautifully expressive coffee that highlights the precision of washed processing, the character of Kirinyaga, and the dedication of the smallholders behind it.
