Wilmer Alexis Grau Montoya has built a reputation in the Montecillos region for doing things the thoughtful way rather than the fast way. At his 1,670-metre farm and mill in Intibucá, he starts by carefully sorting the cherry before running it through a hand depulper he’s customised with a motor. He once relied on a mechanical mucilage remover, but years of trial and tasting led him to a better method. These days he dry ferments the parchment, then washes it through a channel for a cleaner, more expressive cup. He also handles processing for his mother, Joaquina Montoya Alvarado, applying the same attention to detail to her harvest.
Wilmer’s influence reaches well beyond his own coffee. As chairman of the local producer group, he brings growers together for regular discussions, shared learning and quality improvements. That collective effort has strengthened their connection to the international market and helped lift the standard of coffee coming out of Pozo Negro. This microlot reflects that dedication. It’s a naturally processed Bourbon grown high in the hills of Intibucá, shaped by care, community and a commitment to doing things properly.
